{ Hollandaise Sauce }
Source: Jann Werry Jann writes: "This may actually come from the Joy of Cooking, I can't remember. I got it from my Mum though. However, it is the simplest way to make great hollandaise. To make Bearnaise add tarragon leaves before blending. Oh yes, there is absolutely nothing about this that is low-fat or low-cholesterol." Ingredients: 1 cup butter (1/2 lb) 3 egg yolks pinch of cayenne 2-3 capsful real lemon juice 1. Melt butter. Do not let it boil or your hollandaise won't thicken properly. 2. In your blender, put egg yolks, a pinch of cayenne, and lemon juice. 3. Put the lid on the blender and take out the middle part of the lid. Turn the blender on high and slowly add the hot melted butter. Serve immediately. |
