{ Barbecued Marinated Brie }

Elaine writes: "The gal who made this for me used red, green and yellow peppers and also used more garlic than is listed.  It is absolutely fabulous - looks incredible."
 

Ingredients

1 tbsp lemon juice
1 tbsp vegetable oil
1/2 red pepper (chopped finely)
1 tbsp fresh parsley (chopped finely)
1 clove garlic, minced
1 tsp dijon mustard
1/4 tsp black pepper
8 oz wheel Brie or Camembert
Crackers or French bread

1. Combine all ingredients except cheese and bread or crackers.  Mix well.

2. Place cheese wheel in a small, shallow glass dish and poke it full of holes with a fork.  Pour marinade over cheese.  Cover and let sit in refrigerator at least 2 hours or overnight.

3. Preheat barbecue to medium (350 F).  Place a piece of foil on grill and poke holes in foil with a skewer.  Place cheese on foil, spooning mixture over top.

4.  Heat just until cheese starts to bulge around the edges and centre is soft - about 15 minutes.  Serve warm with crackers or French bread.

The Brie can also be heated in the oven - bake at 350 x 10-15 minutes.
