{ Caesar Salad }

Source: Debbie Riches

Serves: 4-6

Just a Thought...

Debbie writes: "A friend of mine many years ago showed me how she made this.  Her name is Fran.  l don't know if it was her recipe or whether she got it from someone else...but l do know that everyone who ever eats it wants the recipe.  This is a big hit at all my dinner parties."

Ingredients:

     1 head romaine, cleaned and chopped to your liking

     3-4 cloves of garlic (depending on how spicy you like it)

     juice from 1/2 a lemon

     1/3 cup grated parmesan

     1/3 cup olive oil

     1 egg

1.  In a blender combine all ingredients except the romaine.  (After blending this should have the consistency of mayonnaise.  If it doesn't, either the eggs are not fresh or the blender was not dry.  Water will make the dressing too runny)

2.  Spoon dressing over lettuce and mix well.  Add some homemade croutons (or storebought if you prefer).  You can also add bacon bits and if you like anchovies, you can add anchovie paste to dressing while it is in the blender.
Personally, l hate it.

Homemade croutons

1.  Butter bread on both sides.

2.  Sprinkle with garlic powder, salt, pepper and onion salt.

3.  Toast in oven til golden.  Let cool and break into pieces.
