{ BBQ Baby Back Ribs }

Sue writes: "I wish I had bought ribs for the weekend now!"
Ingredients:
2-3 racks of baby back ribs, each cut into about 4 pieces 1/2 cup ketchup 1/2 cup soya sauce (lite is OK) 1/2 either honey, brown sugar or maple syrup (they're all good, but I think we prefer the maple syrup; also you can substitute Sugar Twin Brown, or "lite" syrup if you're counting calories) 1-1/2 cups water 1 T minced garlic 1/2 cup chopped onion *Tabasco Sauce or cayenne pepper to taste (I like 'em hot - erin) and/or liquid hickory smoke
1. Mix ketchup, soya, sugar, garlic, onion and water together and heat in a large pot (the deeper the better).
2. Add the ribs and toss to coat them with the liquid. You can also add some liquid smoke or some hot pepper sauce or cayenne if you like them very spicy. (I also add curry - told ya I like 'em hot - erin)
3. Once the mixture has come to a boil, reduce to a simmer, cover and cook for about an hour, rearranging the ribs occasionally to keep them covered with the liquid.
4. When they are very fork tender, remove the ribs and bring the liquid back to a boil and cook on high for 1/2 hour until it has reduced to the consistency of barbecue sauce. Stir frequently, making sure it doesn't burn.
5. You can do all of the above ahead of time, and save the last part for just before you are ready to eat.
6. Heat the barbecue to medium-high. Coat the ribs generously with the sauce, and cook for about 10-15 minutes, basting frequently with the sauce on both sides, until the ribs are nicely browned and glazed. Enjoy!!! |
