{ Chicken Roll-ups }

Just a thought:

This looks like a terrific recipe, especially with the low-fat options.  Elaine writes: "I have been making this recipe for almost 30 years, very simple and so good!" 
 

Ingredients: 

     4 half boneless chicken breasts

     4 slices bacon

     1 can cream of mushroom soup (can be low fat)

     1 small container of sour cream (can be low fat)
 

1.  On a washable surface, lay a piece of bacon down, put boneless chicken on top lengthwise and roll up in a little bundle.  Repeat. 

2.  Arrange in baking dish.

3.  Mix soup and sour cream together, dollop over the bundles.

4.  Bake uncovered at 250 for 3 hours, basting occasionally.

This can be doubled/whatever.  The long slow cooking makes the bacon flavor go right through the chicken.  Great served over rice.
