{ Garlic Beer Can Chicken }

Sue writes: "This is a combination of my 2 favourite methods of cooking chicken!  It's a very tasty recipe, a variation on the "beer-can" chicken that is so popular. We moved the bar-b-q close to the back door so that I can cook this all winter!"

Ingredients:

1 large roasting chicken
salt
pepper
olive oil
sea salt
rosemary
fresh garlic 
1 can beer

1. Season inside of chicken with salt and pepper.

2. Rub outside with olive oil, then with a rub made of equal parts of sea salt, pepper, rosemary and any other herb you like. 

3. Place several garlic cloves and a sprig of rosemary into ¾ can of beer.  Place can inside an upright chicken roaster and stand chicken upright over the roaster and stand in a foil pan. 

4. Split up several heads of garlic into individual cloves, (the more the better!) do not peel, and place in the foil pan around the chicken.

5. Put the pan onto the bar-b-q grill at medium heat and cook until golden brown (and internal temperature reaches 185°F).  Remove the garlic cloves after about 1 to 1-1/2 hours. 

6. Remove the chicken, separate the juices in a gravy separator if you wish, add chicken stock and thicken for delicious gravy.  Serve the roasted garlic cloves on the side.  They are absolutely delicious spread on a fresh baguette!
